Olympic Celebrations…

Photo Jul 27, 6 18 00 PMIn honor of the Olympic Games in London this year, our hood friends got together to watch the opening ceremonies and EAT!

Our host wanted to have “British” food for the evening… so we looked into shepherds pie, fish and chips… maybe even some potatoes! (hahaha) I decided to make my take of a trifle. A traditional English desert, but I made it my own way. The colors are red, white and blue… so it could have easily been at home here in the USA or the UK!

The creation started from my favorite pintrest post. Making the cake with only a can of soda and a few drops of food coloring! The creamy pudding part of the trifle was a new pintrest find… Cool whip and Instant PUDDING!

 

Let’s get started…

For the cake:
One white cake mix
One Sprite Zero
Red and Blue food coloring

For the pudding:
One tub of fat free cool whip
Two boxes (8 servings total) of Sugar Free Instant Pudding mix (I used cheesecake)
One cup skim milk

Mix the cake mix and soda together, then divide into three separate bowls. (remember to use metal of glass, the food coloring will stain plastic) Color the batters and place in cake pans. Bake according to the directions on the box. (our 3 round pans took about 20 minutes)

After the cakes cool completely… this is the hardest part for me… I hate to wait!

In the meantime I made the pudding, using the instant pudding and milk. Mix the two just until the pudding starts to get thick. Then add the tub of cool whip. Fold it in and try not to over mix it. Let is sit in the fridge for an hour or so… this was hard for me too… I could have ate the whole bowl!!

Start to assemble the trifle by placing a layer of cake on the bottom of the bowl. Then add a layer of pudding mix. Then follow with another layer of cake and pudding. Continue until you have reached the top of the bowl. I ended with the rest of the pudding. It turned out great and was a hit at the Olympic Event.

    1. Thanks Grace! I love trifles too and look for any reason to make them! The soda and cake mix trick is so cool... and it has way fewer calories than one made with eggs and oil... I was shocked too! but it's SO GOOD!

Cricut magic

I am really enjoying my Cricut. This year I’ve made all kinds of cool things with it, cards, banners, tags, stencils, snowflakes… But my favorite thing so far has to be a gift I made for my sister for Christmas this year! My sister is quite the baker and takes her treats all over town, to others to enjoy, whether its the girls meeting or a family dinner, she likes to share her confections with everyone. I had come across a Pin that showed the etched bottom of a glass 9x13 pan and thought that would be cute to make for her… But the more I thought about it the more I talked myself out of making it. To those that don’t know me too well might think that this blog title means there’s going to be tiny little feet running around our house soon, and you’d be half right … and those that do know me will know that this means that those tiny little feet are actually paws! A dear friend ours came home from trip to Texas to find the little kitten (of about 9 months) she left in the care of her husband and 3 sons was prego! I’m not saying her husband is to blame, in his defense those 3 sons are a handful!! She let me know that if we were ready to be kitty parents again we had first pick of the litter… well, as it turns out I might have been the hold up all this time for us to jump into pet parent-hood. Mike has all for it! So I told her that we would claim 2 of the little bundles when they made their appearance… then we waited for them to be born… April 19th around 5 in the evening I got the first text that the little ones were on the way! Our friend is an experienced animal person so she ha
